Chicken Soup

Use either the leftover of the rotisserie chicken or add skinless thighs (with bone) about 2 pieces.
   - You can also substitute the thighs with drumsticks (remove skin) or baby back ribs*

2-3 large onions cut in half
3-4 garlic cloves
1 celery stick cut in half
1/4 of a whole green bell pepper (remove stem and seeds)
2 med to large carrots cut in half
4 strings/hairs of saffron (optional)
Herbs- I like to use Goya Adobo with Cumin but you can use whatever all seasoning you prefer or nothing at all.
Salt and pepper to taste.

Throw everything in a pot and cover with water. Turn on heat until water begins to boil for up to 5 minutes. Lower heat so that the water slightly simmers. Cover. Cook for 1 1/2-2 hours.

Once it is cool, strain it, and you can serve it in a bowl or a mug (or in a sippy cup or baby bottle). Always ask your pediatrician when you can give your baby soup or any of the ingredients on this page. When your baby is old enough to try foods, you can mash up the carrots and see if she will eat it. Same for the chicken. Break some small pieces and have her try some. It's a nice treat mixed with rice. If there are leftovers, remember that you can freeze it for later use.

*My Polish friend actually uses baby back ribs instead of chicken, and uses Vegeta seasoning. It's very tasty and the meat falls off from the bone.
